The yeast Saccharomyces cerevisiae UFMG A-905 was obtained from a collection of S. cerevisiae that has been tested in vitro using simulated gastrointestinal conditions and tested in vivo for its protective effect in mice gnotobiotic animals challenged with Salmonella typhimurium, Escherichia coli and Clostridium difficile, thus characterizing for the first time a potential probiotic of Brazilian origin.
